How was the TOFU?
Well, I did try...
and hubby gratefully ate a good serving ...
but it was not good.
The good news was that a Chipotle restaurant had opened in our town just 2 days before :)
And it was a good opportunity to visit for the first time
(though the first few days of a restaurant opening are usually a zoo).
The tofu was a nice idea, but there is a texture thing going on.
I thought that by baking the tofu, it would be more crispy,
but alas, it was not.
So I will at least take a month off before trying that ingredient again.

Saturday: Grilled Chicken Sandwich
Monday: Salmon (a Christmas gift), sesame lime cabbage salad, fried potatoes
Tuesday: Red Lentil Soup
Wednesday: Sweet Potato Black Bean Enchiladas
Thursday: Chicken Tacos
Friday: Breakfast for Dinner (Church Christmas Eve Service)
Saturday: Smoked Salmon Chowder
