Last week, I made Chipotle Zucchini Wedges - YUM!
6 large zucchini
2 Tbls. olive oil
1 Tbls. chopped chipotle pepper in adobo
1/2 tsp salt
1/2 tsp pepper
Toss zucchini wedges, oil, chipotle, salt and pepper on baking sheet.
Bake at 350* for 25 min. or until tender stirring once.

Monday - Leftover Italian Pork and Mashed Potatoes
Tuesday - Leftover Egg Roll in a Bowl
Wednesday - Chicken Caesar Salad
Thursday - Fried Rice
Friday - Soup and Sandwich
