A Cooler Meal

What a wonderful Lord's Day we had yesterday ...
food for the soul, encouragement from the saints ...
just an encouraging day.
We have also come off a beautiful 4 days with cooler temps.
I even had the windows open all day one of the days.

We are back to hot temps and my menu plan went out the window.
All we crave is fruit, cold things ...
Well, we need the veggies too,
and the protein.

How about a simple twist on a Potato Salad.
Perfect with a grilled chicken breast, smoked sausage, ...



Creamy Dill Potato and Pea Salad

1 1/2 lbs potatoes
12 oz peas
1/3 c plain greek yogurt
1/4 c mayo
2 tsp dried dill (or 2 TBSP fresh)
1 TBSP apple cider vinegar
1/2 tsp salt
1/2 tsp pepper

Cook cubed potatoes 10-15 minutes.
Add peas last 3 minutes.
Drain.
Mix in remaining items.
Chill.
