Steak Soup!

There is nothing like cool, crisp weather to lead me to make a nice pot of soup.  I asked hubby which kind he would like today with fresh bread and he suggested a vegetable-beef soup.  It has been so long since we have shared this steak soup.  No, it is not made with steak, but hamburger.  The steak flavor comes from the steak sauce that you drizzle on each bowl. 

Steak Soup
1 c butter/margarine
1 c flour
1 1/2 lbs ground beef
1 onion, chopped
6 (10 oz) cans beef consomme/stock/broth
1 c diced carrots
1 c diced celery
1 c diced potatoes
1 can green beans
16 oz can tomatoes
10 oz frozen corn
10 oz frozen peas.

Melt butter in a soup pot.
Add the flour, stirring constantly for 3 minutes.
Add broth and continue stirring 3 minutes more.
Add vegetables an cook over medium heat until tender.
In a separate pan, brown beef and onion.
Drain and add to vegetable broth.
Season with freshly ground pepper and steak sauce if desired.
Serves about 10

I think that I will also make a batch of applesauce today.  Going to try it in the crockpot this time.  I LOVE AUTUMN!
